Hotel kitchen

Large commercial kitchen serving guests, with high drainage loads and grease management.

A hotel kitchen is a large-scale commercial food preparation area serving guests for breakfast, lunch and dinner, plus banquet and conference catering. Across Greater London, hotel kitchens are concentrated in Westminster, Camden and Kensington. Drainage characteristics include high-volume grease management (often a large in-ground grease trap or biological dosing system), multiple sink stations, walk-in fridge condensate drainage, ice machine waste, dishwasher banks and laundry waste from in-house laundries. Common issues include grease blockages downstream of saturated traps, foul odours migrating into kitchen prep areas and pump failures on basement-level kitchen drainage. Hotels usually hold trade effluent consent from Thames Water and arrange professional grease trap servicing on a tight cycle. CCTV surveys are commonly used to verify pipe condition before lease renewal or refurbishment programmes.
